Better if you have

  • Salt & Pepper (s&p)

Ingredient

Egg 5
Onion 1/2 Small
Sandwich Ham 2~3 Slices
Potato 1 medium
Mayonnaise 5Tbs
---option---
Crab Meat 1 Long Slice
Sweet Relish 2 Tbs
serves 5, makes 5 sandwich

Let’s make it!

1. Hard boil 5 eggs, separate white and yellow.
2. Microwave potato for 5 min (or until it’s soft) and peel.
3. Dice onion, ham, egg whites, potato, crab meat into small pieces.
4. Put everything in a large mixing bowl except egg yolks.
5. Add mayonnaise, relish or pickle, and salt pepper. Mix lightly.
6. Lightly crumble egg yolks wih fingers into a bowl.
7. Mix everything with spoon.


The reason I separated the two is because when you mix everything at once, yolks tend to become almost jelly like texture.


you can see I cut and into a bowl one ingredient by one.  Onion, egg whites, potato, ham. Don’t cut them too small.


I added imitation crab meat to add some color and meaty-ness but you don’t have to if you don’t have it. Then 5Tbs of Mayo, 2Tbs of Relish. I wanted to add salt-marinated cucumber but didn’t have it, so instead, I used sweet relish I always have in my fridge. Salt and pepper to your taste! I put generous amout of pepper ^^


I added homemade jalepeno pickles because I like a little kick!~ but it’s totally up to you. (so much better in my opinion)

Above: Finally add crumbled egg yolks, I put it last.


Mix with spoon. Try to not to mix too much.


It’s done. You can serve it as a side dish or make sandwiches ^^


Egg sandwich is great for bento (lunch box) as well as a late-night snack. So easy~ I know most grocery stores sell this but try making it at home. Probably more healthy and fresh! Enjoy.
